What do you do to keep from feeling overwhelmed by all the tasks, projects, and to-do's associated with running a business?

I do a variety of things. First off, the tasks, projects and to-dos never seems to die down so it's time to get organized! I use this time management worksheet / daily checklist (http://www.eatsuccess.com/time-management-worksheet/) in my business and it really helps me to stay on-task and at the end of the day, see what I accomplished as sometimes we need a reminder otherwise all we see is what we DIDN'T get done. There are also some free tools on this page (http://www.eatsuccess.com/free-business-tools/) that may help you with organization (such as free project management software, free time tracking software, etc.) that have helped me a lot and I use daily. It's all about systems and checklists!

As eatsuccess pointed out, you have to get and be organized! You will find that once you are organized, your workflow will become more fluid.
A tool that I use on a daily basis is Google Apps for work. It offers an entire collection of apps that help with productivity and organization. I specifically use Gmail, calendar, Google Docs and Google Spreadsheets. Having a centralized cloud based software system allows for continual workflow when I move from my desktop to laptop or even my phone. There are many other cloud based software companies that offer similar apps, however, I have no experience with them.
Another thing you can do is set realistic goals. Trying to finish as much as possible each day may seem productive, but will eventually lead to burnout.
If you have a large list of tasks to be completed, break them up over several days.
If you have the funds available, you could hire and delegate to a virtual assistant certain duties to relieve some of your workload.
